CHOCOLATE CHUNK COCONUT ICE CREAM

Makes 1 Quart or 6 Zoku Servings

INGREDIENTS
2 - 13.6 oz cans of coconut milk 
1 cup turbinado sugar (sugar in the raw)
1 tablespoon spiced rum

ADDITIONS
1/3 cup shredded coconut, toasted
1/2 cup dark chocolate chips 
1/4 cup slivered almonds (optional)

TOPPINGS
high quality hot fudge sauce
toasted coconut

DIRECTIONS
Mix coconut milk, sugar and rum in a blender until smooth. Add shredded coconut, dark chocolate chips and slivered almonds about three-quarters of the way through the freezing process. Top with hot fudge sauce and additional toasted coconut. 

FREEZE
Follow the instructions included with your ice cream maker for churning and freezing.

LEMON ICE CREAM

Makes 1 quart or 6 Zoku servings

INGREDIENTS
6 large egg yolks
1 cup granulated sugar
2 cups heavy cream
1 cup half and half
zest of 2 large lemons
½ cup fresh lemon juice
1 teaspoon pure vanilla extract

DIRECTIONS
Set up a cold-water bath: a large bowl with a 50/50 mix of cold water and ice. Place a smaller bowl in the center with a mesh strainer over the bowl.

Beat the egg yolks and sugar until thoroughly combined, set aside.

Heat the cream, half and half, and lemon zest in a medium saucepan over medium heat until the cream begins to bubble around the edges of the pan. Very slowly begin to pour the hot cream over the eggs and sugar, whisking constantly until all of the cream has been added.

Return the custard to the saucepan and cook over medium heat, stirring constantly, until thickened. The custard is done when you run your finger down the back of a coated spoon and it leaves a line, about 170˚F/77˚C. Don’t let the custard come to a boil or the eggs will scramble.

Strain the custard through the strainer into the clean bowl and chill for 30 minutes, stirring occasionally. Stir in the lemon juice and vanilla. Cover and chill mixture in refrigerator for at least 8 hours or overnight. Stir well before using.

ADDITIONS
If desired, top with fresh berries and festive sprinkles.

HOMEMADE STRAWBERRY ICE CREAM

Makes 1 Quart or 6 Zoku Servings

 INGREDIENTS
1 1/2 cups rinsed and hulled fresh strawberries
1/2 cup granulated sugar
2 tablespoons freshly squeezed lime juice
1 teaspoon vanilla extract
1/4 teaspoon Kosher salt
1 1/4 cups heavy cream
1 1/4 cups whole milk

DIRECTIONS
Puree the strawberries, sugar, lime juice, vanilla extract and salt in a blender or food processor. Add the cream and milk and pulse to combine. Chill ice cream mixture and stir well before using.

FREEZE
Follow the instructions included with your ice cream maker for churning and freezing.

BANANA SOY ICE CREAM

Makes 1 Quart or 6 Zoku Servings

INGREDIENTS
1 cup packed sliced banana (about 2 small bananas)
2/3 cup light agave nectar
2 teaspoons banana extract
1/4 teaspoon Kosher salt
1 1/2 cups plain soy milk

DIRECTIONS
Puree the banana, light agave nectar, banana extract, salt and 1/2 cup soy milk in a blender or food processor. Chill ice cream mixture and stir well before using.

Follow the instructions included with your Zoku Ice Cream Maker for churning and freezing. Store extra ice cream mixture in the fridge.
