The Tondo company of Modena makes a superior quality white balsamic produced with scented grapes from Emilia Romagna. These grapes produce a soft and delicate seasoning, suitable for all those who like the taste of balsamic vinegar but also want to keep the natural colors of vegetables or other dishes intact.
This glaze is ready to use straight from the bottle to decorate and finish the most refined dishes. It can be added at the end of the cooking process because it does not need to be heated further. 150 ml Balsamic Vinegar 2 leaf
1/2 dozen strawberries
2 canned chipotle
1 bay leaf
Herbes de Provence (a pinch)
Bring Balsamic slowly to boil over medium heat. Drain and thinly julienne chipotle. Slice strawberries.
Add all ingredients to vinegar and reduce slowly to half volume, stirring occasionally

Due to a low pressure cooking method, this richly perfumed must keeps its original color, while the natural fermentation further emphasizes its fragrance. Its beautiful golden color does not change a dish's natural look. Try on grilled vegetables, fish and white meat.
This white balsamic has all the flavor of traditional dark balsamic vinegar, but it won't stain your sauces, soups, or dressings a dark purple color. Use it anywhere you would use regular balsamic, or try it in place of white wine vinegar to add extra body to your recipes.
6 cups baby greens
1-1/2 cup cooked, sliced chicken breast
1/3 cup blue cheese, crumbled
1/4 cup chopped walnuts, toasted
1 tart green apple, cored and thinly sliced
2 Tbsp. apple juice concentrate
2 Tbsp. white balsamic vinegar
2 tsp. sour cream
1 tbl. applesauce
1/3 cup extra virgin olive oil
Toss mixed greens, chicken, blue cheese, pecans and apple slices together in a large salad bowl.
Whisk together vinaigrette ingredients and pour over salad. Serve immediately.
